The Brisket Breakfast Taco was the main reason I had to visit The Pit Room. While the spot is famous for its legendary BBQ and often has a long line, they also serve a variety of breakfast tacos in the morning—usually with no wait at all.

The best part? These tacos are served on homemade tortillas prepared with their signature smoked brisket fat. Yes, you read that right. All the breakfast tacos come with refried beans, but I opted to skip them so I could fit in a few more varieties.

I ordered the Brisket & Egg (with cheddar cheese for an extra $0.50) and the Pulled Pork Hash & Egg. The tacos are made to order, and you can watch them assemble everything right in front of you. I’m sure the guy behind the counter thought I was being a creep for staring, but I just wanted to see how the “sausage was made”—no pun intended.

I started with the Brisket taco. When I unwrapped it, I was blown away—there was so much brisket, and it looked incredibly juicy. It was delicious, but if I could do it again, I would definitely add the hash browns for that extra bit of crunch.

Next, I dug into the Pulled Pork Hash & Egg. The pork had a great smoky flavor, and the hash browns added the perfect crispy texture I was craving. It was a solid taco, but as I was eating, I couldn’t stop eyeing the crispy bacon sitting under the heat lamp. I ended up ordering the Bacon & Egg taco with cheddar cheese as well. It was packed with bacon and, as expected, it was awesome. Again, I’d recommend adding hash browns to this one, too—because why not?

I do have one major regret: I didn’t get to try the Jalapeño Sausage or the Chorizo tacos. There were just too many spots to hit and limited time in Houston, so I couldn’t get to everything.

The Pit Room serves some of the best breakfast tacos I’ve ever had. If you’re ever in Houston, this place is a must-visit.
